Q. How does Sticky Fingers ship my meal?
A. Our Mail Order ribs, wings and pulled pork barbecue are cooked with the same slow smoking process that made our restaurants so famous. Then we quickly freeze and cryo-vac them to seal in the natural juices and flavor. All these items are shipped direct to your door in reusable thick-walled foam containers with dry-ice to insure your order arrives fresh, tender and ready to eat.
Q. What if I'm only going to use half the order I received?
A. Once the ribs are thawed, they should be cooked. We do not recommend refreezing the product once it has thawed. To freeze unused frozen ribs, wrap tightly in foil and place in a Ziploc freezer bag and place in the freezer. Be sure to date the bag. These ribs will remian fresh for approximately 3 months in your freezer.
Q. Can I refreeze the ribs, pork or wings?
A. Again, we do not recommend refreezing our product once it has thawed. The USDA says in Article 69: You may safely refreeze frozen foods that have been thawed if they still contain ice crystals or are still cold... below 35 degrees Fahrenheit. Refreezing partially thawed foods can reduce the quality of the product, especially in flavor or texture.
Q. What if I cook all my ribs and some are left over? Can I reheat them? If so, how long?
A. If you have leftovers, you can reheat them by simply popping them in your microwave until warm in the middle. Do not overcook; they tend to become dry.
Q. How long after I receive my package do I have to cook them?
A. We recommend you cook your ribs within seven days if stored in the refrigerator, pork within five days if stored in the refrigerator and wings within five days if stored in the refrigerator.
Q. Can I store the meat in the freezer?
A. Your products should remain fresh for up to three months in the freezer. We do recommend that you cook them as close to that time frame as possible.
Q. Have the meats already been cooked?
A. Yes. When you receive your package, all the meat products are fully cooked and only need to be reheated to be enjoyed (see reheating instructions).
Q. Do the ribs, pork or wings come with sauce on them?
A. Our ribs and pulled pork are hickory-smoked in our pits until they are fully cooked and include a slight amount of our famous Memphis Original Barbecue Sauce to insure flavor and moistness. This small amount of barbecue sauce will help in reheating and will not keep you from preparing the ribs "dry" if that is how you like them. Our hickory smoked wings arrive without any sauce so you can put your favorite on them.
